the comfort food of the season, delicious and simple to make— ground beef & potato chili.
the best thing about chili— you can make it with whatever you want! this one recipe can come with so many different variations. want ground turkey or bison instead? switch it out! dont have any squash? just use beans or potatoes instead! have a different kind of cheese? use it! this recipe is just a blueprint. play around with it as much as you’d like.
BEEF & SQUASH CHILI

serves 2
INGREDIENTS:
1 lb ground beef
32 oz. beef bone broth
2-3 large squash, diced
1/3 cup yellow onions, diced
2-3 large carrots, diced
4 cloves of garlic, minced
20 oz crushed tomatoes
14 oz. canned corn, drained
14 oz canned beans of choice, drained
1 tbsp chili powder
1 tsp ground cumin
1/4 tsp cayenne pepper
1 tsp cinnamon powder
1 tbsp brown sugar
salt to taste
pepper to taste
optional to garnish
lime slices
green onions
cilantro
goat cheese
avocado
DIRECTIONS:
season ground beef with salt and pepper. add olive oil to a pan and place on medium heat.
add ground beef to the pan. cook for about 10 minutes, or until beef has turned brown and is thoroughly cooked before taking it off heat.
in a dutch oven or large pot, drizzle olive oil and bring to low-medium heat. add diced onion, minced garlic, and chopped carrots, an diced squash to the pot, letting them sauté for a few minutes.
once carrots have softened, add crushed tomatoes, bone broth, corn, beans, chili powder, cumin, cayenne pepper, cinnamon, brown sugar, salt, and pepper to the pot. bring to a boil before lowering the heat down to a simmer.
after about 10 minutes, check to see if squash has softened and can be pierced with a fork. if so, add ground meat to the pot and let it simmer for a few more minutes, or until thick.
serve with optional toppings.
