creamy mushroom soup (dairy & gluten free)

as someone who use to be the biggest hater of mushrooms, this soup changed the game for me. a dairy free, easy, creamy, and nutrient dense soup recipe that will make you love (and even crave) mushrooms at any time of the year.


CREAMY MUSHROOM SOUP (DAIRY/ GLUTEN FREE)

prep 5 minutes

cook 20 minutes

serves 4


INGREDIENTS:

10oz baby bell mushrooms, chopped

1/4 large onion, diced

3 garlic cloves, minced

3 cups beef broth

1.5 cups canned coconut milk

2 tsp coconut aminos

2 tbsp tapioca flour

salt to taste

pepper to taste

1-2 bay leaves

2 tbsp olive oil

chives (optional to top)


DIRECTIONS:

  1. add olive oil, chopped onion, and minced garlic to a dutch oven or pot and saute until aromatic.

  2. once aromatic, add chopped mushrooms to the pot and allow to cook for 5-10 minutes, or until the mushrooms have become soft and shrunk in size.

  3. add the coconut aminos to the pot.

  4. in a small bowl, add beef broth and tapioca flour and mix until well incorporated.

  5. add bay leaf and broth to the pot and bring to a simmer.

  6. pour the coconut milk into the pot and mix altogether.

  7. add salt and pepper to taste.

  8. allow it to cook for 10 minutes before serving.
