goodbye store-bought pasta sauce; this homemade roasted red pepper sauce, although time consuming, is so easy to make and will add so much flavor to your dish! pair with any protein of choice and you have a 5 star pasta dinner.
CREAMY ROASTED RED PEPPER PASTA SAUCE
prep 30 minutes
cook 20-30 minutes
serves 2
INGREDIENTS:
1 lb pasta of choice
3 large red peppers // 6 mini red peppers
1/2 yellow onion, quartered or chopped
3-4 garlic cloves, diced
2 tbsp extra virgin olive oil
1/2 cup whole milk // heavy cream
1/4 tsp oregano
1/2 tsp salt
1/4 tsp black pepper
2 tbsp butter
1-2 tbsp pasta water
1/4 cup chopped italian parsley (optional for garnish)
DIRECTIONS:
preheat oven to 400 degrees Fahrenheit.
cut red peppers into halves if using mini, and quarters if using large, then place them onto a parchment paper lined baking pan.
add onion and garlic to the dish and drizzle with olive oil.
place the dish into the oven and bake for 25-30 minutes, until vegetables are softened and turn golden brown.
while peppers are baking, bring a pot of water to boil and add pasta. cook until pasta has turned soft. pour pasta water out of pan, leaving 1-2 tbsp for the sauce.
once peppers are done baking, take them out of the oven and cover with aluminum foil for 5-10 minutes.
once 10 minutes has passed, take the aluminum foil off and allow the peppers to cool for a few minutes.
begin peeling the skin off of the peppers as best as you can— this is the most tedious part, it may take a little bit of time!
once peppers are peeled, add them to a food processor or blender, along with the onions, garlic, milk, pasta water, oregano, salt, and pepper.
blend until smooth.
in a large pan, add butter. once butter is sizzling, pour sauce from the food processor into the pan.
allow the sauce to simmer with the butter.
add pasta into the pan with the sauce and mix until fully incorporated.
chop italian parsley and use for garnish.
