creamy tomato carrot soup

carrot tomato soup

prep 10 minutes

cook time 25 minutes

serves 2


ingredients:

  • 3-4 roma tomatoes, chopped

  • 5-6 carrots, chopped

  • 1/4 yellow onion, chopped

  • 2 garlic cloves, minced

  • 14 oz. crushed tomatoes

  • 1 cup bone broth

  • handful of basil leaves (optional)

  • 1/4 cup full fat heavy cream

  • 1 tbsp brown sugar

  • olive oil

  • salt

  • pepper


directions:

  1. chop tomatoes, carrots, onions, and basil leaves, and mince garlic cloves.

  2. place large pot on low heat and add olive oil, onion, garlic, carrots, and tomatoes.

  3. close with a lid and keep on low heat until carrots can be pierced with a fork.

  4. once all vegetables are soft, add crushed tomatoes & bone broth to the pot. add 1 tbsp brown sugar, and salt and pepper to taste.

  5. mix together and let it simmer for 10 minutes.

  6. take pot off heat and let it cool down for a few minutes.

  7. transfer to a food processor or blender. add chopped basil leaves to mixture.

  8. blend until smooth.

  9. transfer back to the pot and add heavy cream. mix until well incorporated.

serve with sourdough bread, crackers, or homemade grilled cheese.
