since it’s officially getting colder outside, all the warm, comforting, and nourishing recipes are now making an appearance. if you feel overwhelmed by soup recipes, this one should make you feel better- with only a few ingredients and almost no work, it’ll make your autumn food dreams come true.
delicata squash soup
prep 30 minutes
cook 20 minutes
serves 2
ingredients:
4 delicata squash
1/4 cup chopped yellow onion
3 garlic cloves, peeled and minced
1 1/2 cup beef bone broth
1/2 cup full fat canned coconut milk
2 jalapeños seeded and cut into slices (optional garnish)
salt to taste
pepper to taste
handful of pumpkin seeds
directions:
preheat oven to 375 degrees fahrenheit.
slice squash in two halves length wise and scoop out seeds.
drizzle with olive oil and sprinkle salt, placing them into oven, cut side facing up.
roast for 30 minutes or until the inside of squash turns brown, then take out of oven and let it cool off for about 10-15 minutes.
in a small pot on medium heat, add avocado oil or butter, chopped onion, and minced garlic. cook until the onion turns brown.
scoop cooked squash out of the skin and add to the pot. add more oil or butter if necessary.
add in bone broth and coconut milk and let it simmer for 10 minutes.
take off heat and let it cool.
transfer soup to a blender or food processor, or use a handheld blender to blend the soup until smooth.
transfer to serving bowls, and garnish with a spoonful of coconut milk, pumpkin seeds, and sliced jalapeños.
