i have been making this banana bread for almost two years, and it’s become one of my favorite recipes. my husband begs me to make this at least once a month, its that good! so soft and light— and the best part? its gluten, dairy, and refined sugar free !!
gluten free banana bread
prep 10 minutes
bake 45 minutes
serves one loaf
ingredients:
2 cups almond flour
2 ripe bananas
1/2 cup coconut sugar
2 tbsp butter (sub coconut oil)
2 eggs
1/4 cup coconut milk
1 tsp baking powder
optional add-ins:
pumpkin seeds
chia seeds
chocolate chips
flax seeds
mixed nuts
directions:
preheat oven to 350 degrees
mash bananas in a large bowl
add eggs, butter, coconut sugar, coconut milk to the large bowl and mix.
add almond flour and baking powder to the bowl and mix until all ingredients were well incorporated.
line loaf pan with parchment paper & pour in banana mixture.
top with optional toppings of your choice.
bake for 40-45 minutes.
