get ready for a mouth watering, chunky, chocolatey cookie recipe that uses requires zero gluten and even zero refined sugar! i have recently cut down my sugar intake because of skin issues, so making cookies without it was a challenge— one i was willing to take. luckily, after a few tries, it turned out perfectly, and these choclate chip cookies were a hit between my family and i.
no special gluten free flour mix is needed, and you probably already have all the ingredients in your own home. lets start baking!
gluten free chunky chocolate chip cookies
prep 10 minutes
bake 20 minutes
makes 10-12 cookies
ingredients:
1 & 3/4 cups oat flour (make your own by grinding up oats)
1/2 cup almond flour
1/2 tbsp baking powder
2 eggs
1/4 cup melted butter
1/2 cup raw honey
dark chocolate bar (i use Hu Kitchen chocolate)
directions:
preheat your oven to 350 degrees.
in a large bowl, mix together dry ingredients (flour and baking powder).
in a separate bowl, crack in 2 eggs and whisk together.
add melted butter and raw honey and mix until smooth.
add wet ingredients to bowl with dry ingredients and mix until well incorporated.
cut up your dark chocolate bar into small chunks and add to the mixture.
carefully mix altogether.
place a piece of parchment paper on a baking sheet and grease it with butter.
mold your dough into small, flat circles and place on baking sheet, about 1-2 inches away from one another.
bake for 20-25 minutes, or until you can easily stick a toothpick through the cookie without leaving residue.
enjoy with a cup of raw milk!
