along with the many many benefits of beets (which you can find on my instagram page @wellnessroks) comes the tasty and refreshing drink— beetroot juice. this is so simple to make, and although it can get messy, it’s worth it in the end!
both a juicer or a blender work!
HOMEMADE BEET JUICE
prep 10 minutes
makes about one quart
INGREDIENTS:
2 beet roots
4 carrots
1 lime
optional additions: apples, ginger root, cucumber, orange
DIRECTIONS:
wash all produce thoroughly. cut the ends of off the beet root and the carrots.
begin peeling the beet root with a potato peeler or knife. once peeled. chop the beets into small pieces.
chop carrots and any additional fruits or vegetables, and squeeze fresh lime juice from the lime.
begin running the produce through a juicer one at a time.
if you are using a blender, add all produce to the blender, along with 16-20 fl ounces of water and blend. strain with a colander or cheesecloth to separate juice from the pulp.
store in the fridge and enjoy!
