homemade butter is probably the easiest and most fun and therapeutic thing to make— if you’ve never done it, i urge you to try it now with this easy recipe!
HOMEMADE SALTED BUTTER
prep 15 minutes
makes 8oz
INGREDIENTS:
1 pint heavy whipping cream
1 cup water
ice
salt to taste
DIRECTIONS:
in a large standing mixer bowl, add heavy whipping cream.
with a whisk attachment, place mixer on medium to high setting. continue checking on it every few minutes.
it should soon become a fluffy “whip” texture. continue to whisk.
after a few minutes, you will begin to see curdles forming in the bowl. if the curdles begin to rise on the sides of the bowl, simply turn the mixer off and gently scrape the sides of the bowl with a spatula.
continue to whisk until the curdles combine together into a larger ball, and liquid begins to separate from the ball. you may have to cover your mixer with a towel to prevent it from splattering all over your kitchen!
mix for another 2-3 minutes until butter is clearly separated from the milk.
add a cup of water with ice to a separate bowl. take the butter out of the mixing bowl and gently squeeze out any more of the milk.
form a ball with your butter and place it into the ice bowl.
do NOT throw away the buttermilk that is left in the mixing bowl— it can be use to make pancakes, cakes, etc.
gently roll your ball of butter into the ice bowl, washing away all of the excess buttermilk. the cold water prevents the butter from melting during this process.
pour water out of bowl, leaving the butter alone, and sprinkle salt all over your butter, gently pressing and rubbing it into the butter.
begin shaping your butter into whatever form you would like.
wrap the butter in parchment paper and place into the fridge to harden.
