salmon is one the best sources for healthy fatty acids and certain vitamins; pair it with all the nutrient-dense vegetables and addition of sauerkraut in this bowl, and you have a satiating, nourishing, and gut supporting meal in less than 30 minutes!
nourishing salmon bowl

cook 15-20 minutes
serves 2
ingredients:
two wild caught salmon filets
1 cup of basmati rice
raw carrots
cooked bok choy
sauerkraut
avocado
scallions
2 tbsp chopped parsely
red pepper flakes
homemade spicy avocado mayo sauce
for the salmon marinade:
2 tbsp avocado mayo
1 tbsp coconut aminos
1/2 tsp rice vinegar
juice from 1/2 a lemon
for the spicy mayo:
1/4 cup avocado mayo
1 tbsp sriracha or other hot sauce
2 tsp lemon juice
directions:
place 2 cups of water and 1 cup of rice over high heat. add 1 tbsp of butter and a pinch os salt, and bring to a boil. reduce to a simmer and cover, until rice is fully cooked.
while rice cooks, begin preparing salmon. preheat oven to 400 degrees fahrenheit.
mix all marinade ingredient in a small bowl. pat down salmon and place in a small baking sheet.
pour marinade all over salmon and brush excess onto filets evenly. place leftover lemon slices on top of filets. place in oven and bake for 15-20 minutes.
while salmon is baking, prepare all vegetables; cook bok choy, cut avocado, shred carrots, etc.
once rice is finished cooking, transfer to a serving dish. take salmon out of oven, and place filets on top of rice.
add all other additions to the bowl.
mix together ingredients for spicy mayo and pour on top of dish. add red pepper flakes, sesame seeds, etc. and serve.
