potato & sausage breakfast hash

okay, get ready for the best breakfast you have ever had. this recipe is for those mornings when you have a little extra time on your hands, and you want to make a fancier meal for yourself, your significant other, or someone else in your family. i promise you, they’ll be impressed.





potato & sausage breakfast hash

prep time 5 minutes

cook time 20 minutes

serves 2-3


ingredients:

  • 6 mini yellow potatoes

  • 3 pasture raised eggs

  • 2 large chicken sausages

  • 1/4 cup chopped scallions

  • handful of arugula

  • 1 large avocado, sliced

  • grass fed butter

  • salt to taste

  • pepper to taste

  • nutritional yeast (optional)


directions:

  1. wash and dry mini potatoes, then cut them into four quarters. transfer to a small pot and add 1.5 quarts of water.

  2. bring the pot of water to a boil. once it boils, lower heat and let the potatoes simmer for ten minutes, or until you can easily pierce them with a fork. make sure they don’t overcook and become mushy.

  3. drain the water from the pot. add salt, pepper, and nutritional yeast to the potatoes and mix together.

  4. in a large pan, add a tbsp of butter on high heat. add the potatoes to the pan and cook uncovered on high heat for the potatoes to become crispy.

  5. while potatoes are cooking, cut sausages up into round slices. once the potatoes begin to turn dark brown, lower heat and add sausages to the pan, letting them cook.

  6. after a few minutes, crack 3 eggs into the pan, adding butter if necessary. sprinkle in chopped scallions. cover the pan with a lid and let the eggs cook on low heat for a few minutes.

  7. once eggs are almost done, take them off the heat and let them cooked covered in the pan for an extra couple of minutes.

  8. transfer the hash to a plate. add handful of arugula and sliced avocado on top. sprinkle sea salt and pepper onto avocado.
