living in a van, meals need to be quick, simple, and easy to make to save time, space, food, and water. here’s one of our favorite toast combos that bring all the elements— salty, savory, sweet, and crunchy to make a perfect toast. stone fruit is in season until early october so hurry and make this!!!






prosciutto & plum toast

make 10 minutes

serves 1


ingredients:

2 slices of sourdough

2-3 tbsp goat cheese

handful of arugula

4 slices of prosciutto

2 plums

sea salt flakes

honey or olive oil (optional)


directions:

  1. toast bread (optional).

  2. spread goat cheese on bread.

  3. begin layering— arugula, prosciutto, plum, sea salt flakes.

  4. drizzle honey or extra virgin olive oil on top (optional).
