spring and summer is the perfect time for fresh salads— and the best salads are made with lots of ingredients and flavors, and this smoked salmon salad checks all the boxes.
SMOKED SALMON SALAD
prep 10 minutes
serves 2
INGREDIENTS:
2 cups greens arugula (may substitute greens of choice)
4-5 oz smoked salmon
1/2 cup chopped cucumber
1/2 cup red onion, thickly sliced
1 avocado, chopped
2 tsp fresh dill
red pepper flakes (optional to garnish)
salt to taste
pepper to taste
DRESSING:
freshly squeezed lemon juice from 1 lemon
4 tbsp olive oil
DIRECTIONS:
once all produce has been chopped, combine all ingredients for salad in a large bowl.
in a small bowl, mix together ingredients for dressing.
pour dressing on top of salad.
