level up your regular pasta recipe to this loaded, nutrient—dense, colorful, and light summer pasta salad. she’s bright, tasty, and can be made in under 30 minutes ! perfect for any summer evening.
steak pasta salad
prep 10 minutes
cook 10-12 minutes
serves 2
ingredients:
gluten-free pasta
spring mix
1/2 lb steak bites (one large steak cut into pieces works as well!)
2 tomatoes
2 cucumbers
4 sweet minion peppers
10 olives
dressing:
1 tsp mustard
2 tsp raw honey
1 tbsp olive oil
2 tbsp lemon juice
salt
pepper
directions:
a few hours before you begin cooking, season the steak bites with preferred seasoning and place in a tight bag or bowl in the fridge, allowing it to marinate.
place a pot of water and salt on high heat. once it begins boiling, add pasta and bring down to a simmer. cook for however long instructions say on label (typically 10-12 minutes).
while pasta is cooking, begin prepping vegetables. chop tomatoes, cucumbers, sweet peppers, and olives into small pieces and season with salt and pepper.
in a small bowl, mix together all ingredients for dressing.
set vegetables aside and take steak bites out of the fridge.
cook steak in your preferred method (pan seared or grilled) and cut up into smaller pieces.
add spring mix, pasta, vegetables, and steak bits into a bowl.
drizzle with homemade dressing & serve.
