yes— this recipe is a bit more tedious than the usual ones found on this blog— but it is so worth it in the end! for all my gnocchi lovers who are also gluten free, this one’s for you!
SWEET POTATO GNOCCHI (GLUTEN FREE)
prep 1 hour
cook 15 minutes
serves 3-4
INGREDIENTS:
4-5 large sweet potatoes
1-2 cups of flour (depending on the flour you use, this measurement may vary. if you are using regular all-purpose flour, one cup should suffice. if you are using gluten free flour, you may need more to make the dough. i personally used Bob’s Red Mill Gluten Free 1:1 Baking Flour, and I ended up using around 2 cups)
4 tbsp butter
1 tbsp salt to taste
DIRECTONS:
preheat oven to 400 degrees fahrenheit and line a baking sheet with parchment paper.
using a fork, poke holes all over your sweet potato before placing on the baking pan.
once oven has preheated, place baking sheet in oven and bake for 40-50 minutes.
once potatoes are done baking, take them out of the oven and allow them to cool off before peeling away the skin and scooping out the flesh.
place sweet potato flesh into a large bowl.
begin adding flour, 1/2 a cup at a time. gently fold the flour into the sweet potato, adding more flour if necessary. dough should feel doughy yet still moist. it will not be as firm as typical dough— which is completely normal.
add salt to the mix and gently fold together.
once you have the proper ratio of flour to sweet potato, transfer the dough to a clean, lightly floured surface.
carefully knead and roll the dough, so it does not fall apart. do not over-knead.
once dough is in a ball, divide it into three sections.
roll each section gently into a rope before cutting it into small 1/2 inch—1 inch pieces. gently press the end of your fork into each piece.
bring a large pot of water to boil. simultaneously, melt butter in a large pan.
gently drop gnocchi pieces into the boiling water. boil for about 1-2 minutes, or until pieces begin to float.
with a fork or small colander, transfer the gnocchi pieces to the pan. cook for another 2 minutes.
transfer to a bowl. drizzle leftover melted butter on top of gnocchi.
garnish with shredded cheese or herbs of choice and enjoy!
